Mushrooms and Vegetables Stew

 

Such a simple recipe but delicious, highly nutritious and full of superfoods. Suitable for all year round.

Ingredients:

• 2 onions
• 2 garlic cloves
• 1 green pepper
• 1 red pepper
• ½ cup green beans
• 3 potatoes
• 300grams mushrooms
• 2 carrots
• Saffron
• ½ cup white wine
• thyme, rosemary
• olive oil, pepper, salt

Instructions:

1. Peel onions and garlic and dice
2. Wash and clean peppers and dice.
3. Peel carrots, wash and thinly slice.
4. Peel green beans and cut in to pieces. Peel potatoes, wash them and cut in pieces.
5. Wash mushrooms and dice the biggest ones.
6. Sauté onions with 3 tbsp of olive oil for about 10min, until soft. Add garlic, peppers and carrots and sauté for 5 min. Add mushrooms and after 5 min, add green beans.
7. Add salt, pour the wine, and reduce for a few seconds.
8. Add potatoes, a few saffron strands and cover with a little bit of water. Cover and leave boiling for 10 min.
9. Add a pinch of thyme and rosemary and continue boiling for 5 minutes.
