Spanish Lentils to start the New Year the right way!

 

Traditionally lentils are a symbol of death and resurrection, since the seed is planted on earth and it blossoms, multiplying once more. That is why eating a plate of lentils on the last day of the year is a good way to generate prosperity. This is an old tradition in Italy and Spain.

I would like to share with you the recipe for Lentejas (Lentils Stew):

Ingredients:

• 250 gr. Lentils
• 1 Spanish chorizo (“Palacios” brand works well or sausages if they are easier to find)
• 1 small onion
• 1 organic green pepper
• Half a small glass of olive oil
• 1 cup basmati rice
• 1 bay leaf
• 2 organic carrots
• 2-3 small organic potatoes
• 2 garlic cloves
• 1 pinch saffron
• water or chicken/vegetable broth
• salt

1. Soak the lentils overnight
2. Cut the chorizo into dice-shaped pieces. Peel and wash the carrots and potatoes. Slice the carrots and halve the potatoes. Wash and slice the green pepper.
3. In a pressure cooker, add the olive oil and slice the onion and garlic, fry, stirring all the time. After a minute or so, add the sliced green pepper, carrots and potatoes.
4. Add the bay leaf, saffron and chorizo. Stir everything
5. Add the rice and stir for 1-2 min
6. Add the lentils and stir for 1 min.
7. Cover everything with water or broth, about half a palm over the ingredients. Add salt to taste.
8. Cover and close the pressure cooker and when it starts boiling leave it for about 20min.
9. Let the stew rest until the pressure cooker is totally off.
10. Serve and enjoy!! Fresh lentil stew could last up to 3-4 days in the fridge so cook once and enjoy for several days ☺.
