Pumpkin Protein Pancakes


This is my 100th blog!! So, I would like to celebrate with a yummy dessert recipe!


• ½ cup ground oatmeal (ideally, organic gluten free rolled oats)
• ½ tsp of baking powder
• ½ tsp cinnamon
• ½ pumpkin spice
• ¼ cup canned pumpkin
• 2 tbs coconut milk
• 3 eggs
• 1 tsp of vanilla extract
• Stevia to taste


1. Combine all dry ingredients in a bowl and mix
2. Then add all wet ingredients
3. Spray a non-stick pan with coconut or olive oil and pour the mix to cook the pancakes. I suggest flipping them a couple of times to make sure that the eggs have cooked completely. You can also cook them in muffin tins to make little muffins.
